Since you've been to the Farmer's Market this week and stocked up on veggies, and your neighbor may have left some zucchini on your porch yesterday, you may need some inspiration for what to do with your produce. Here are a few of my go-to recipes for zucchini and other squash, as well as a 5 minute homemade hummus that's fabulous for dipping.

I am EXHAUSTED! I'm currently pet sitting for 2 different clients, plus I work at my "day job" as a Therapeutic Riding Instructor on Saturdays, and I had to go to the DMV to renew my Driver's License and get the new RealID. And let me tell you, the easiest part of today was the DMV! In and out in 30 minutes!!
The morning started out normal, but around 9:30am one of the barn volunteers called me over to look at one of our miniature horses. He was trembling, shaking like a leaf, and not eating. He'd been fine just 30 minutes before, and he was suddenly, and very obviously, in distress. I called my boss and told her what was happening, then started looking at all his vital signs. Rapid pulse, breathing rate normal, slightly dehydrated, slightly pale gums. Then I took his temperature: 103.2*. Baseline for a horse is 99-100*. Uh oh. My boss gets a hold of the vet who is an hour away, and we start trying to cool this little guy down. We're hosing him off, dousing him in rubbing alcohol (rapid evaporation helps with cooling), putting ice packs on him, standing him in front of a fan, putting drops of peppermint oil on his back, and we gave him Banamine. While we waited for the vet, we took his temp every 5-10 minutes to see what it was doing. At it's highest, the fever was at 105.2*, YIKES!! When the vet arrived, she pulled blood and did a few tests. She didn't have any conclusive results, but ruled that it was probably a viral or bacterial infection. Thankfully, the Banamine kicked in and started to drop his temp, and when I checked him tonight he was at 99.9*. Whew! After the stress of this morning, plus all of the rest of the errands I had to do today, I was feeling pretty beat when I got back to my clients' house. As I went to water the vegetable garden, I noticed a sweet little frog jump out from behind the carrots. Now today was a very hot, dry day (about 100*), and the soil was very parched, so I was very surprised to see a frog. As I looked at him, I thought, "if this little frog can survive the stress of a hot day without a pool of water, I can survive stress, too!" The frog in the garden at the end of my day helped remind me to be aware of my stress, but not crippled by it, and to take life's challenges in stride. Thank you, little frog! Now to run some Stress Away in my diffuser and feel like I'm on a tropical island somewhere. Today’s the day! Time to fire up the barbecue and get ready to eat some delicious dishes. Here’s a recipe fromYoung Living Essential Oils for a lighter, refreshing dish that could be part of the meal, or dessert! And I’m sure your horse wouldn’t mind if you snuck them a bite or 2.
